We’re talking about cheeses with identity; all served with a side dish of history. The Pestana Hotel Group has joined forces with Ortodoxo, which makes artisanal cheeses in Azeitão, in a partnership that combines hospitality and territory. This collaboration involves a commitment to quality, tradition and the local economy, which means exclusive Ortodoxo cheeses in a selection of Pestana Hotel Group’s restaurants, such as RIB Beef & Wine Lisboa, MORSI and Olive.
Originally set up by Maria Arriaga e Cunha and José Maria Abreu Lima, Ortodoxo has reinvented the art of Portuguese cheesemaking. The project was inspired by a passion for raw milk and an artisanal, organic and certified method, which focusses on respect for nature and regenerative agriculture. The results are top-quality cheeses, with authentic flavours and textures that reflect the Arrábida terroir.
Recently opened in Vila Nogueira de Azeitão, the company cellar is already producing iconic cheeses, like Veludo, a slow-cure cottage cheese, and Grande do Viso, which was inspired by Alpine cheeses and washed with red wine until it reaches an unmistakable intensity. Such delights combine tradition and innovation, rejuvenating an ancestral, gastronomic heritage.
Queijos Ortodoxo
As a symbol of this partnership, the Pestana Hotel Group has adopted Augusta, a Jersey cow bred in organic pastures, whose milk will serve the production of Ortodoxo cheeses, which will then be served in some of the hotels’ restaurants – a perfect circle. More than a symbolic gesture, this is clear proof that investing in origins and producers also means investing in the experience of those at the table.
On the menus of RIB Beef & Wine Lisboa, a restaurant at Praça do Comércio, as well as those of MORSI and Olive, restaurants on Rua Augusta, these cheeses become discreet but impressive: be it on carefully prepared boards, or as part of recipes that respect and highlight ingredients. A direct connection between table and countryside, not forgetting the Pestana experience and table.
